There is nothing I hate more than added food colouring in my children’s’ food (ok, there are a lot of things I hate more – But this is where my head is right now). I wanted to create something that was delicious, and not a bunch of empty sugar calories. Something that would cool them down in the summer and that I could feel good about giving them.
I got into the kitchen with my 7 year old son and the Double Berry Coconut Creamsicle was born! All you need are popsicle moulds and a blender. You can always go for only one flavour if you are running short on time.
No need to be limited to berries. Use what you have…pineapple, mango, watermelon….
This is fun to make with the kids and sure to please!
Top Layer
Blend:
- ½ cup of coconut milk
- 1 Tbsp hemp hearts (optional)
- ½ cup of fresh or frozen blueberries
- ½ banana
- Pour them into the moulds only filling them halfway
- Place in freezer while you make the second layer
Bottom Layer
Blend:
- ½ cup of coconut milk
- 1 Tbsp hemp hearts (optional)
- ½ cup of fresh or frozen strawberries
- ½ banana
- Pour them into the moulds filling them up the rest of the way
- Place in freezer for one hour
- You may need to run under some warm water to help it slide out easily
