Fall Salad

I need to say that there is nothing better than friends and family that support your eating habits or lifestyle. People have different belief systems around food, religion, values and the list goes on. I would hope that we work hard at maintaining positive relationships with friends, family, neighbours and strangers despite their personal beliefs. We all need to do what we KNOW is right for us.

Having said that, The Chaim Family has always done a great job of going out of their way to make sure they can feed us well when we have gatherings (kudos and thanks!). Our cousin Sheri, The Babe from the Burbs, can always be counted on to prepare a hearty salad Adam and I can’t wait to get our hands on. It’s always free of animals products and gluten. At times there is an optional dairy ingredient left off to the side so everyone can help themselves, if they so desire (a nice hint for your family!). Trust me when I say these are not rabbit foliage kinds of salads…These salads leave everyone going back for more (that’s why I always start with a double serving).

So here is an “un-recipe” of one of Sheri’s latest and greatest…  

I’ll leave it up to you to decide on the quantities depending on how many you are serving. Don’t worry, you got this!

 

Ingredients:

Salad:

  • Roasted sweet potatoes or roasted squash, cubed
  • Roasted beets, cubed (Either roast them or get the prepared ones from costco!)
  • Red onion, diced
  • Pomegranate seeds
  • Candied Pecans (Sheri’s pick) OR Dry, Toasted Pecans (Plant Trainers’ pick)
  • Field greens with extra arugula

 

Sheri’s Best Dressing Ever:

  • 1/4  Red Wine Vinegar
  • 1/2 cup water
  • 3 Tbsp. maple syrup
  • 2 Tbsp. fresh chopped parsley (or 2 tsp. dried but fresh is always better)
  • 1-2 cloves FRESH garlic, minced
  • A pinch of sea salt

Shake it up and enjoy!
