You must make this Valentine’s Day cake…
I NEVER make layer cakes because they always seem complicated and have so many ingredients. This cake was SIMPLE and because it’s raw, you can’t go wrong. Trust me, if I invented it, you can make it with two left hands. I made the crust the night before and finished the cake off the next day.
It’s so delicious and has great ingredients. You can cut up some fruit and serve it for lunch!
We’ll be having a picnic cake lunch in the living room this year!
I suggest using a spring-form pan and using a bit of coconut oil or parchment paper around the edges. But you can make them in cupcake holders too.
Crust
Ingredients:
- 1 cup raw walnuts
- ½ cup cashews*
- 8 dates, soaked
- ½ tsp sea salt
- ¼ cup cacao nibs (optional)
Directions:
- Place nuts, dates and salt in processor and process until it’s sticky and chopped well.
- You may need to scrape down the sides
- Add nibs and pulse through a few times
- You can do this a day before
- Refrigerate while you do the next step
*You can use all walnuts or both walnuts and cashews.
Chocolate Layer
Ingredients:
- ½ cup unsweetened cocoa or cacao powder
- Add ¼ cup maple syrup
- ⅓ cup melted coconut oil
- ½ tsp vanilla extract
Directions:
- Place all ingredients in a bowl and whisk together with a whisk or fork
- Spread on crust and refrigerate while you do the next step
Top Layer
Ingredients:
- 8-10 strawberries
- ½ cup cashews (soaked for 30 min)
- ½ cup coconut cream*
- 2 tbsp maple syrup
- 1 tsp Lemon Juice
Directions:
- Blend all ingredients together
- Spread on crust and refrigerate while you do the next step
- Add to cake and place in freezer while you do the next step.
*Use the thick part in the can of coconut milk. Don’t shake the can. and you can refrigerate the can first so it does not separate.
Decor
Ingredients:
- 2 tbsp of dark chocolate chips
Directions:
- Melt chocolate chips and using a fork decorate “Jackson Pollock” style
